Gyeran-mari, roll it! roll!


Gyeran means egg and mari means roulade (same as Japanese word maki). Gyeran-mari must be most frequently seen in lunch box(Dosirak 도시락) menu. It is nothing but an omelet but you can make it little prettier and you can always make it with any left-over vegetables in the fridge.
 






Gyeran-mari (serves 2)




50g spinach (frozen), 20g carrot (grated), 4 eggs (beaten), salt, and vegetable oil.

Preparation:
1. Thaw the spinach and squeeze to get rid of water.
2. Beat the eggs in a bowl with some salt.

Cooking:
1. Preheat the frying pan. Put some oil.
2. Stir fry the carrot and put it on a quarter space of the pan, and put the spinach next to cover another quarter.
3. Pour the half of the beaten eggs into the pan over the carrot and spinach.



4. Once the egg is set but not completely cooked, start rolling the omelet starting from the edge of the vegetables.
5. Bring the rolled omelet in the middle of the pan and pour the rest of the egg into the half of the pan and roll again.
